Poke Bowl
Ingredients
- 2 cups sushi rice
- 3 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 pound sushi-grade tuna, diced
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sriracha (optional)
- 1/4 cup scallions, chopped
- 1 tablespoon sesame seeds
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the water is absorbed.
- In a small bowl, mix rice vinegar, sugar, and salt. Heat in the microwave for 20-30 seconds to dissolve the sugar.
- Once the rice is cooked, transfer it to a large bowl and gently mix in the vinegar mixture. Allow it to cool to room temperature.
- In another bowl, combine diced tuna, soy sauce, sesame oil, and sriracha. Mix well and let marinate for 10 minutes.
- To assemble the poke bowl, divide the sushi rice into serving bowls.
- Top with marinated tuna, avocado slices, cucumber slices, scallions, and sesame seeds.
- Masticate.
