Poke Bowl

Ingredients

  • 2 cups sushi rice
  • 3 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 pound sushi-grade tuna, diced
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)
  • 1/4 cup scallions, chopped
  • 1 tablespoon sesame seeds

Instructions

  • Rinse the sushi rice under cold water until the water runs clear.
  • In a pot, combine the rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the water is absorbed.
  • In a small bowl, mix rice vinegar, sugar, and salt. Heat in the microwave for 20-30 seconds to dissolve the sugar.
  • Once the rice is cooked, transfer it to a large bowl and gently mix in the vinegar mixture. Allow it to cool to room temperature.
  • In another bowl, combine diced tuna, soy sauce, sesame oil, and sriracha. Mix well and let marinate for 10 minutes.
  • To assemble the poke bowl, divide the sushi rice into serving bowls.
  • Top with marinated tuna, avocado slices, cucumber slices, scallions, and sesame seeds.
  • Masticate.
